Preparation Guidelines

Oven: Preheat the oven to 200oC, gas mark 6. Slice the potatoes in half. Place them on a roasting tray and drizzle over olive oil and melted garlic butter. Place tomatoes on the vine and sliced olives in the tray. Season with coarse salt. Place the tray in the oven for 30-40 minutes, or until the potatoes are golden. Boil: Boil the potatoes in lightly salted water for 20-30 minutes, or until soft. To make a Mediterranean-style potato salad, slice the potatoes in half and place them in a bowl. Drizzle over a generous amount of extra virgin olive oil and fresh lemon juice. Add in pitted olives, capers, crushed garlic and chopped parsley and mint. Season with coarse salt and freshly ground pepper. Toss everything together, check the seasoning and serve.
