Download PDFSeparate the yolk and place in a large bowl. Adding the olive oil, a drip at a time and blending as you go. Once you have blended a quarter, whisk in the remaining olive oil in larger amounts. When it starts to really thicken, add a squeeze of lemon juice to loosen, then continue adding the oil, with more lemon when needed.
Peel the garlic clove and smash it up in a pestle and mortar with a good pinch of salt. Season further to create a feisty aioli.
