Preheat the oven to 180°C, gas mark 4. Grease a 30cm x 20cm ovenproof dish.

Pour the milk into a large saucepan and heat it over a medium heat until warm. Once the milk begins to boil, gradually whisk in the maize meal, stirring constantly to avoid lumps. Cook for 10 minutes, stirring, until the mixture thickens. Add the tin of creamed corn and mix well.

Separate the egg yolks from the whites, placing the whites in a large bowl and the yolks in a small bowl. Melt the butter in the microwave and allow it to cool slightly. Add the melted butter to the yolks, whisking constantly, and then stir in the baking powder. Add this mixture to the pot on the stove.

Whisk the egg whites until foamy before adding the sugar and salt. Whisk until stiff peaks form.

Remove the pap mixture from the heat, then gently fold in the beaten egg whites until just combined

Pour the mixture into the greased dish and bake for 35 minutes, or until golden and set.

Slice and serve hot.
