Download PDFFinely dice the onion, tomato and capsicum. Mince the garlic and grate the carrot.
Heat the oil in a medium-sized pan over a medium heat. Sauté the onion for 8 minutes until soft and golden.
Add the garlic, carrot, capsicum, ground coriander and cinnamon. Cook for 5 minutes until golden on the edges.
Stir in the tomato paste and cook for 1 minute, then add the fresh and tinned tomatoes, chutney, sugar, salt and pepper.
Simmer uncovered for 20–25 minutes until thickened, stirring occasionally.
Finish with finely chopped coriander.
