Download PDFPlace the flowers in a large teapot or jug. Bring 500ml of water to a boil and pour over the flowers. Cover and allow to steep for 20 minutes. Strain through a sieve and stir in the honey to taste. Set aside to cool.
Meanwhile, prepare the boba. In a small saucepan, bring the remaining water to a boil and add the boba pearls. Cook according to package instructions or until the boba float. Scoop them out and allow to cool.
When ready to serve, spoon the boba into two glasses. Add the ice cubes. Pour over the iced tea and decorate with more viola flowers.
Serve immediately.
