Download PDFIn a large bowl, beat the softened butter and icing sugar until pale and fluffy, then mix in the vanilla extract and egg yolk. Stir in the flour, ground pistachios and salt until the dough comes together.
Shape the dough into a ball, wrap in cling film and chill for 30 minutes.
Preheat the oven to 180°C, gas mark 4. Line two baking trays with baking paper.
Roll out the dough on a lightly floured surface to 4mm thick. Using a star cookie cutter, cut out stars. Then switch to a smaller star cutter and cut out smaller star from the centre of half the cookies.
Place on the trays and bake for 8–10 minutes, or until lightly golden at the edges. Transfer to a wire rack to cool completely.
Spread pistachio cream onto the flat side of each whole star, then gently press a cut-out star on top to sandwich. Dust with icing sugar before serving.
Store in an airtight container for up to 3 days.
