Download PDFIn a blender, combine the cottage cheese, 20g Parmigiano Reggiano, egg whites, oats, baking powder and salt. Blitz until smooth.
Preheat a waffle maker and lightly spray it with avocado oil.
Pour the batter into the waffle maker and cook until golden and crisp.
Meanwhile, toss the rocket lightly with olive oil, black pepper and 20g shaved Parmigiano Reggiano.
Once the waffles are ready, stack the sandwich with slices of turkey, rocket and top with another waffle.
Serve while warm.
