Download PDFPlace a small pot over a medium heat and combine the caster sugar with the water. Bring to a boil and simmer for 1 minute.
Juice and zest 6 limes. Allow the water mixture to cool before stirring in the lime juice.
Discard the seeds and roughly chop the watermelon. Place the roughly chopped watermelon in a blender and blitz on high until completely smooth.
Pass the watermelon juice through a sieve and combine with the sugar syrup.
Divide the mixture between 8 popsicle moulds and freeze for 2 hours or overnight, until frozen solid.
To serve, run the moulds under warm water for a few seconds until easy to release. Mix the lime zest from the 6 remaining limes and salt and sprinkle over the popsicles before serving.
