Download PDFPreheat the oven to 200°C, gas mark 6.
Thinly slice the potatoes, leaving the skin on. Mince the garlic and pick the thyme leaves.
Butter a large baking dish. Arrange half the sliced potatoes on the base. Season with salt and pepper. Scatter over fresh thyme and spread half of each cheese over the potatoes.
Layer the remaining potatoes on top and season again. Mix the mustard and cream in a jug and pour evenly over the potatoes. Sprinkle the remaining cheese over the top.
Cover with foil and bake for 30 minutes. Remove the foil and bake for further 15 minutes more until golden and bubbling.
