Download PDFTo make the crème caramel milk, spoon about 1 tablespoon of the caramel sauce or dulce de leche into the bottom of each glass. Whisk the milk and vanilla bean paste in a jug. Slowly pour the vanilla milk over the back of a spoon into each glass to create a layered effect. Chill until ready to serve.
Slice each madeleine in half horizontally. Spread a little crème fraîche or mascarpone on the bottom halves. Top with a spoonful of jam. Close with the other half of the madeleines.
Dust with icing sugar, if desired.
Serve the caramel-layered milk alongside the mini madeleine sandwiches and fresh berries.
