In a bowl, toss the prawns with olive oil, crushed garlic, lemon juice, salt and pepper.
Preheat the barbecue or grill pan to a medium-high heat and lightly oil the grates.
Thread the prawns onto skewers. Grill for 2–3 minutes per side, or until they turn pink and are slightly charred.
Transfer the prawns to a serving plate. Chop the parsley and scatter over the prawns. Serve with lemon wedges and cold Bundaberg Ginger Beer.
