Download PDFMince the garlic. Zest and juice a lemon. Finely chop the parsley.
In a medium-sized bowl, combine the melted butter with the garlic, lemon, parsley, lemon paste, paprika salt and pepper to make a flavourful base.
Place the halved lobsters, cut-side up, on a large tray. Brush the butter mixture generously over the lobster flesh.
Preheat the grill to medium-high heat or use a griddle pan.
Place them flesh-side down on the grill for 3–4 minutes until lightly charred. Flip the lobsters, baste with more butter, and continue grilling for a further 3–4 minutes until the meat is opaque and just cooked through. Be careful not to overcook, as this can make the lobster tough.
Remove the lobsters from the grill and arrange them on a platter with salt.
Serve with lemon wedges and fresh dill.
