A refreshing frozen AG1 granita served over fresh pineapple with lime and mint.

Download PDFIn a bowl, whisk together the AG1 powder, coconut water, pineapple juice and lemon juice until fully dissolved.
Pour into a shallow container and freeze overnight until solid.
In a separate bowl, combine the pineapple cuts with chia seeds, lime zest and torn mint leaves.
Using a fork, scrape the frozen AG1 mixture to form granita crystals.
Spoon the pineapple salad into serving bowls and top with the granita. Serve immediately.
