تحميل PDFPlace the chia seeds, coconut milk, honey and vanilla extract in a bowl. Stir well and let sit for 10–15 minutes, stirring occasionally, until slightly thickened.
In a blender, combine the açaí purée, banana, milk and the thickened chia mixture. Blitz until smooth and creamy. Pour the mixture evenly into 6 popsicle moulds, tapping the moulds gently on the counter to remove air bubbles. Insert sticks and freeze for at least 6 hours, or overnight, until fully set.
When ready to serve, briefly dip the moulds in warm water to release the pops. Dip each frozen pop into coconut milk, then into desiccated coconut to coat.
Serve immediately or return to the freezer until ready to enjoy.
