Download PDFIn a small pan over a medium heat, add the honey and cook for 3-4 minutes until it darkens slightly and develops a deep caramel aroma. Carefully add the water and sage leaves, allowing it to bubble and loosen into a syrup, then remove from the heat, add the lemon juice and allow to cool.
In a large jug, gently bruise the lemon balm leaves to release their oils. Add the honey syrup and sparkling water, stirring to combine.
Fill the glasses with ice, pour over the mixture and top with sparkling water.
