Finely grate the ginger.
Combine the honey, ginger, water and rooibos tea bags in a medium bowl and bring to a boil.
Peel the orange and set the peel aside.
Remove the pot from the heat and add the orange juice and peel. Stir well. Return the pot to the heat and bring to a simmer for 5 minutes.
Remove from the heat and allow the mixture to cool completely. Then refrigerate until chilled.
When ready to serve, strain through a fine mesh sieve. Divide the cordial between 4 glasses and top up with chilled sparkling water and serve with orange slices.
