Season the salmon fillets with lemon juice, salt and black pepper. Place in a pan with a little oil and gently fry until cooked to your liking, turning regularly.
Meanwhile, heat a little oil in a pan and fry the vegetables along with ginger and garlic for a few minutes until softened.
Serve the vegetables on the plate and place the salmon on top.
Scatter the roughly chopped coriander, a squeeze of lemon and enjoy.
