Freeze the glass you're going to serve the milkshakes in.

To make the chocolate base, whisk the sifted cocoa powder, sugar and 45ml of the milk in a small saucepan over a medium heat until thick and glossy. Whisk the rest of the milk, the chopped chocolate, malted milk powder and salt. Heat until just below boiling point. Take off the heat and allow to cool.

In the jug of a blender, combine two-thirds of the cooled chocolate base with the ice cream and salt. Blend until completely smooth.

Divide the remaining chocolate base between four glasses and top with the milkshake.

Serve immediately.
