Place the vinegar, sugar, cinnamon, peppercorns and bay leaves in a saucepan and bring to a boil.
Place the blueberries in a sterilised jar and pour in the hot vinegar mixture.
Seal and refrigerate overnight. Serve with goat cheese and cold meats.
