Peel and roughly chop the pineapple.
Place the chopped pineapple, granulated sugar, star anise, coconut water and apple cider vinegar in a large, sterilised jar and mash together with a pestle or tablespoon. Refrigerate for 1-2 days.
When ready to serve, strain the liquid and dilute 1 part syrup to 4 parts sparkling water.
