Line a tray with baking paper. Stack two marshmallows on top of each other and push a skewer through the centre to hold them together. Evenly dip the top and sides of each marshmallow stack into the melted chocolate, leaving the front white to form the penguin’s tummy. Place on the tray and allow the chocolate to set slightly.
Cut the jelly beans in half to form the beaks.
While the chocolate is still sticky, press on two candy eyes and one jelly bean half for the beak. Repeat with the rest of the ingredients. Let the penguins set completely at room temperature or in the fridge until firm.
Sprinkle a layer of desiccated coconut into the base of each jar to form the snowy ground. Place one or two marshmallow penguins inside each jar, securing them lightly with a dab of icing on the bottom. Close the lids tightly.
Store at room temperature in a cool, dry place. These are mostly for display but can be eaten within 2 days.
