Toast the hot cross buns. Spread the buns with mayonnaise.

Thinly slice the gherkins.

Top the buns with the sauerkraut, pastrami, a thin layer of mustard, gherkin slices and the Cheddar cheese.

Preheat the grill to its highest setting.

Grill the half with the toppings on until the cheese has melted. Top with the other half of the bun and serve.
