Traditionally, a Reuben is a grilled sandwich is made of corned beef, sauerkraut, Russian dressing and Swiss cheese that are sandwiched between slices of rye bread. We’ve given it an Easter makeover and used hot cross buns and mature Cheddar instead. The mustard adds a nice kick to eat bite

Toast the hot cross buns. Spread the buns with mayonnaise.


Thinly slice the gherkins.


Top the buns with the sauerkraut, pastrami, a thin layer of mustard, gherkin slices and the Cheddar cheese.


Preheat the grill to its highest setting.


Grill the half with the toppings on until the cheese has melted. Top with the other half of the bun and serve.
