Heat the oil in a small frying pan and add the sliced onion, crushed garlic clove, tomato slices and tomato purée. Sauté until soft.
Once ready, make three pockets and gently crack in the eggs.
Season with salt and pepper and cover with the lid until the eggs are cooked to your liking.
To serve, place the eggs on serving dish and garnish with fresh coriander leaves.
