Download PDFThinly slice the tomatoes and onion, then set them aside.
Butter one side of each slice of bread and place them butter-side-together on a board. Layer with the tomato, onion and a handful of grated cheese. Season with salt and pepper. Close the sandwich with the remaining slices of bread.
Place the sandwiches over the grill, over medium coals, turning often, until both sides are golden and the cheese has melted, approx. 5–7 minutes. Make sure to watch them as they can burn easily.
Cut them into triangles and serve immediately.
