Peel back any excess hard leaves from the cabbages.
Using a sharp knife, slice both types of cabbage into 5cm-thick steaks. Lay them flat and cut into 5cm cubes.
Thread the cabbage cubes onto the skewers. Colour block or mix between both types of cubes. Once all the cubes are bunched on the skewers, set aside.
Dress the skewers with the olive oil and place on a preheated grill.
Cook on each side for 4-5 minutes or until tender and charred.
Remove from the heat, season and serve with the chilli, honey and vinegar butter sauce. Add salt and black peppercorn to taste.
