Peel and quarter the pineapple. Thread the pieces onto the skewers.
To make the fondue, combine the orange juice, water, 1 tbsp of sugar and orange blossom water in a small pan and bring to a boil. Allow to bubble for 5 minutes, then take off the heat and stir in the date syrup and tahini.
To make the loumi sugar, crush the dried lime and mix it with the remaining 70g of sugar.
Serve the pineapple skewers with the fondue and loumi sugar.
