Preheat the oven to 180°C, gas mark 4. Line a baking sheet with baking paper.

Cut the leftover bread slices into bite-sized cubes or desired shapes. If using slices, you can remove the crusts, if preferred.

In a mixing bowl, combine the olive oil and spice rub (we used paprika, garlic powder, onion powder, dried herbs, salt and pepper).

Add the bread cubes to the bowl and toss them gently to coat each piece evenly with the spice-flavoured oil. Arrange the seasoned bread cubes in a single layer on a baking sheet.

Place the baking sheet in the oven for approx. 10-15 minutes, or until the croutons are golden brown and crispy. Make sure to flip them once or twice during baking to ensure even browning. Remove the croutons from the oven and let them cool completely on the baking sheet.

Once cooled, store the spiced croutons in an airtight container at room temperature for up to a week.
