At Bordier, a wooden tool – also known as a malaxeur – is used to knead the butter and then the butter is pounded by hand. This process gives the butter flavour and improves its texture.

Sailor Jean-Yves Bordier arrived in St. Malo in the early 80s. There he perfected the art of kneading butter, using time-honoured techniques popular with 19th century butter makers. The artisan acquired La Maison du Beurre Creamery in 1985. Today, Bordier butter is ranked among the best.
