Roughly chop the herbs. Slice the garlic. Juice the lemon.

In a food processor or blender, add the fresh herbs, garlic, lemon juice and olive oil. Pulse the ingredients until they form a thick paste, scraping down the sides of the processor or blender as needed. Adjust the seasoning, if necessary. Adjust the consistency by adding more olive oil, if required.

Transfer the herb paste to a clean jar or airtight container for storage. Store the herb paste in the refrigerator for up to 1 week, or freeze it in ice cube trays for up to 4 months.
