Download PDFTo make the simple syrup, combine the water and sugar in a small pot over a medium heat. Bring to a boil and cook for 5 minutes or until the sugar has dissolved. Remove from the heat and add the mint leaves. Refrigerate until cool, approx. 1 hour.
Place 150g of kiwis in a blender and blitz. Juice the limes.
To make the limeade, combine the simple syrup, kiwi purée, lime juice and ½ cup or a handful of ice a shaker and shake until cold and combined.
Pour into 2 serving glasses and top with the sparkling water.
Serve immediately with sliced kiwis.
