Heat the olive oil in a large saucepan and fry the large onions for 8 minutes until tender.
Add the spices and cook for a few seconds then add the drained and rinsed chickpeas, seedless dates, tomatoes and stock. Simmer for 30 minutes.
Season to taste.
Serve with couscous on the side.
