Instantly recognisable by its vibrant orange colour, this Mimolette is aged for nine months. At this stage, Mimolette develops a firmer, more brittle texture than its younger counterpart. The flavour deepens, becoming richer and nuttier, with a more pronounced, savoury and salty character.
