Roughly chop the chocolate.
Combine the milk and sugar in a small saucepan and heat until almost boiling.
Pour the milk over the chocolate and stir to melt. Leave to cool slightly.
Place the chocolate mixture and 3 large egg whites in a blender with the whipping cream and blitz until smooth.
Pour into a medium-sized serving bowl or two small bowls and refrigerate for at least 1 hour before serving.
Serve with a dusting of cocoa powder and fresh raspberries.
