Place the water, sugar, freshly grated ginger and vanilla seeds in a saucepan and bring it to a boil.
Remove from the heat and allow to cool completely.
Place the syrup, lychees, lemon juice and ice cubes in a blender and blitz until smooth.
Pour into the glasses and serve immediately.
