Stir the vanilla pod seeds into the double thick yoghurt.
Divide the peeled and chopped mandarins between 2 oven-proof glasses.
Sprinkle a generous layer of coconut or muscovado sugar over the yoghurt and brûlée with a blow torch or under a preheated grill until crisp and caramelised.
