For 150g of spicy rub, combine the fine cayenne pepper, dried thyme leaves, fine paprika, brown sugar, coarse sea salt and the freshly ground black peppercorns and store in an airtight container.
To use, simply rub on the chosen cut of meat (pat the meat dry with a kitchen towel before) and set aside.
Once the meat begins to sweat, drizzle it with oil and it’s ready for the BBQ.
