Download PDFSeason the chicken generously with salt and leave uncovered in the refrigerator overnight.
Preheat the oven to 180°C, gas mark 4.
Heat the olive oil and butter in a deep roasting pan and brown the chicken on all sides. Remove the chicken and discard most of the fat, leaving the browned bits in the pan.
Add the milk, garlic, thyme, citrus peels, honey and chilli flakes. Return the chicken to the pan breast-side down.
Roast for 1 hour, then turn the chicken breast-side up and cook for another 15 minutes until golden.
Serve immediately.
