For the salsa, place all the ingredients in a small bowl, season and set aside to marinate.
Preheat a griddle pan over a high heat.
Chop the skinned fish into large 5cm cubes and thread onto 8 mini wooden skewers.
Combine the olive oil, lemon juice and season well. Brush over the fish skewers.
Place on the griddle pan and cook for 2 minutes each side or until charred and cooked through.
Serve the skewers topped with the salsa.
