Chargrill the onion, garlic and leek. Boil or bake the potato in the coals.
Place the onion, leek and garlic in a blender or food processor and blitz until smooth.
Add the potato, crème fraîche, parsley, vinegar and oil and blitz.
Season with the salt and pepper.
