A close relative of the onion, garlic is one of the most popular seasonings to be found in the kitchen. Crushing, chopping or chewing a garlic clove releases the enzyme compounds that are responsible for the sharp taste and strong smell, which are actually the plant’s defence mechanism. Cooking garlic removes a lot of the spiciness, but it is still recommended that parsley is included in garlic recipes to combat the strong smells and tastes.
