Place the chopped strawberries, maple syrup, salt and water in a blender and blitz until combined.
Over a serving jug, pour the mix through a strainer to get rid of any bits.
Add the chia seeds and whisk together and refrigerate for 1 hour.
When ready to serve, whisk and add the lime juice.
Serve with whole strawberries and ice.
