Download PDFPlace peaches in a pan of boiling water and use a slotted spoon to move them to a bowl of ice water after 40-60 seconds. Peel the skin off using your fingers, then cut in half to remove the stone. Place peach halves or slices in a food processor and blend until smooth.
Place a medium-sized pot over a medium-high heat, whisk all the ingredients together and leave to simmer until thickened. This will take about 35-40 minutes.
Add salt and pepper as needed and stir in the lemon juice.
Store the sauce in a sterilised, airtight container.
