Preheat the oven to 200°C, gas mark 6.

Season the salmon with 2 tbsp olive oil, salt and lemon zest and leave for 1 hour.

Blend the peas, dill, 100ml olive oil, pine nuts, garlic, sumac, lemon juice and cheese until smooth.

Place a baking tray in the oven until very hot. Brush the salmon with olive oil and place on baking paper.

Transfer to the hot tray and roast for 10 minutes.

Serve with the pesto.
