Fill a large saucepan with pure sunflower oil (5cms deep) and heat to 180°C.
Mix the 2 large, peeled and grated carrots, grated halloumi and the rest of the ingredients together and shape into tablespoon-size balls.
Fry the balls in batches for 2-3 minutes or until golden brown. Drain on paper towels.
