Finely chop the spring onions. Remove a teaspoon of lime zest with a grater and collect the juice in a cup. Deseed and finely chop the chilli, parsley and mushrooms.
In a large bowl, combine the onions, lime juice and zest, chilli, oil and parsley. Season well.
When ready to serve, toss the mushrooms in the vinaigrette mix and top with a handful of micro greens.
Garnish with raw enoki mushrooms if desired.
